Banana Berry Oatmeal Bake

This breakfast is made with added protein powder, and is super quick to prep. It's one of my favourite study lunches too, since it's easy to take with you & not messy to eat at all.



Ingredients:


  • 1 banana, cut in half

  • 1 cup old fashioned rolled oats

  • 3 scoops vanilla protein powder

  • 1 cup unsweetened plant milk

  • 2 Tablespoons light maple syrup

  • 2 tb natural peanut butter

  • 1 tsp cinnamon

  • 1 teaspoon vanilla

  • Few dashes salt

  • ½ cup mixed berries + 3 tb extra



Directions:


1. Preheat oven to 375 & prep your fruit: Mash half the banana in a small bowl. Slice the other half of the banana into rounds. Cut up any of the large berries into blueberries sized pieces. Set aside.


2. In a medium sized bowl, combine all dry ingredients, and mix together.


3. Add peanut butter & mashed banana to bowl, mix to combine. Then pour in milk & finish mixing.


4. Fold in the ½ cup of berries.

5. Brush or spray three small oven-safe prep containers with cooking oil, and add ⅓ of the mixture to each dish. Spread evenly, then top with banana rounds & remaining berries.


6. Place filled dishes on a baking pan, & bake for 35 min, until fully cooked throughout.


7. Let cool, then seal with lids & store in fridge. Reheat when ready to eat.
