Super cheap and easy. The most expensive part is the seitan beef, but you could also just use textured vegetable protein instead of using seitan beef to make it even cheaper. (Black beans, kidney beans, or lentils would work great as a cheap substitute too.)
Ingredients:
• 2 cups vegan crumble (seitan or TVP, I like to crumble up Fieldroast sausages.)
*If using tvp: add only 1 cup dry, it will cook into 2 cups
• 2 carrots, chopped
• 1 white onion, chopped
• 1 russet potato, chopped
• 2 stalks celery, chopped
• 1 cup peas
• 1 cup corn
• 1 tbsp minced garlic
• 1 15 oz can diced tomato w/ liquid
• 1 8 oz can tomato sauce
• 5 cups vegetable broth
• couple pinches Italian seasoning
• 1 tbsp soy sauce
• 1 tsp onion powder
• salt, pepper, and any other herbs/ seasonings you like
Directions:
Throw everything except the "beef" in a crock pot and cook on high for about 4 or 5 hours, until potatoes are fully cooked. At the last 20 min of cooking, mix in the "beef". That's it!
